Peach Mango Pie


Peach Mango 'Pie' Recipe

If you know at least one Filipino, you've probably heard of Jollibee, the ubiquitous Filipino fast food chain that sells burger steaks, Filipino spaghetti, and of course, the ChickenJoy. If you haven't, I highly suggest searching for the viral Jollibee dance video highlighted in Last Week Tonight that captures Jollibee in a nutshell. When we moved to St. Petersburg, I was ecstatic to learn there's a Jollibee nearby. They have many yummy things on the menu, but my favorite item to order is their peach mango pie. It's usually deep fried to get a crispy crust, but this version uses ready-made crust and an air fryer to make it kinda, sort of, healthier. They turned out to be like peach mango pop tarts, but the taste will bring you right back to Jollibee. Enjoy!

 
 


Ingredients


  • 2 Alfaturo mangoes (or any yellow mangoes)

  • 3 yellow peaches

  • 1/2 cup sugar

  • 2 tbsp water

  • 1 package ready-made crust

  • 2 tbsp vegetable oil (to coat pies for 'frying')

 

Instructions


  1. Start by peeling, pitting, and dicing the mangoes and peaches.

  2. Place in a medium sauce pan. Add water and sugar, mixing well until thoroughly combined with fruit.

  3. Boil for 20-30 mins over medium heat until the fruit and water mixture has reduced and fruit has softened. Let cool (best if left to chill in the fridge overnight).

  4. Preheat air fryer to 400° F.

  5. Cut pie crust into equal rectangular pieces (I did about 3" x 2" pieces). Use the scraps, roll into a ball, and roll out to get additional pieces.

  6. Use a spoon (or small ice cream scoop) to place equal amounts of fruit into a piece of pie crust. Place another piece on top and pinch edges together to seal the pastry. Use a fork or pie edger to crimp the edges. Repeat for remaining pieces

  7. Use a pastry brush to coat each pastry with the vegetable oil. Air fry for about twenty minutes or until golden brown.

  8. Enjoy!
