A Filipino classic for an easy and quick dinner

Spring is fully in swing, and I'm sure in a blink of an eye summer will be here. I don't know about you, but this time of the year always seems to be on 2x speed. Between work, social events, all the spring cleaning, there seems to be so little time! This recipe is not only a Filipino classic (it's only the national dish of the Philippines), but also super easy.
Everyone and their grandmas have their own version of adobo. This is 1 of 3 for me, using an InstantPot or pressure cooker to make everything 10x easier and so much faster. There's literally three instructions: prep the ingredients, throw into a pot, and set to cook! Serve with rice (obviously), and you got yourself a 30-minute meal.
Ingredients
2 lbs bonesless chicken thighs (or any cut of chicken), cut into about 1 inch pieces
1/2 teaspoon whole black peppercorns
3 bay leaves
5 cloves chopped garlic
1/2 cup soy sauce
1/4 cup white vinegar
1 cup water
Instructions
Place all ingredients into InstantPot pan and stir so liquids are mixed.
Set to pressure cook for 20 mins.
Once cooked, enjoy over white rice!
