Baked Cauliflower Tater Tots Recipe


Prep Time: 15 mins | Cook Time: 30 mins | Yield: 20-24 tater tots


 

A couple of years ago, we threw a party that at the last minute, featured a chicken nugget challenge à la Hot Ones with a couple different hot sauces. We had vegetarian friends in attendance that I wanted to be able to participate. So as an alternative to the chicken nuggets, I wanted to make another food vehicle that will carry the hot sauces well. I had to use ingredients I already had in the pantry, and thus, the recipe for my easy, no-fry cauliflower tots were born. They're easy to make and a nice alternative for meat appetizers or a great snack on their own!

 
 


Ingredients


  • 3 cups cauliflower rice, thawed

  • 1 cup grated parmesan cheese

  • 3 tablespoons corn starch

  • 2 eggs

  • Salt & pepper to taste

 

Instructions


  1. Preheat the oven to 350° F.

  2. Start by draining excess water from the cauliflower rice. For best results, use a towel or paper towel and to remove excess water.

  3. In a medium bowl, combine cauliflower rice, parmesan cheese, corn starch, and eggs. Add salt and pepper to season the mixture, and stir until ingredients are thoroughly combined.

  4. Use a spoon (or small ice cream scoop) to place equal amounts into a greased mini muffin pan. Fill just to the top of the mold.

  5. Bake for 30 minutes, flipping each tot halfway through.

  6. Enjoy!
