Kat's air fryer take on a classic sisig recipe

Sisig is a classic Filipino dish made of pork belly, jowl, and ears served on a sizzling plate with an egg on top. In the US, it's typical to see a version with just chopped up fried pork belly. I don't know about you, but even though I love pork belly, I get scared frying it! This version is air fried to make it easier, and I add a bit of mayonnaise to get the creaminess you usually get with the classic recipe. It takes a bit of prep but it's soooo worth it to get the tender and crispy combination! Hope you enjoy!
Ingredients
For the pork:
1.5 pounds of pork belly, cut into about one-inch thick slices
2 bay leaves
1 teaspoon whole peppercorns
1/4 cup vinegar
1/4 cup fish sauce
For the dish:
1 tablespoon vegetable oil
5 cloves of garlic, chopped
half a bell pepper, chopped
1/4 white onion, chopped
1 tablespoon fish sauce
2 tablespoons soy sauce
2 tablespoons mayonnaise
juice of 1 lemon
Instructions
Start by pressure cooking the sliced pork. Place bay leaves, 1/4 cup vinegar, 1/4 cup fish sauce, and peppercorns in the pressure cooker pot. Set cooking time for 15 minutes. Alternatively, if you don't have a pressure cooker, boil for about 30-40 minutes on medium heat until tender.
After cooking, drain all liquid and pat the meat dry. Let rest for ten minutes to make sure it is dry. Use a pastry brush to spread vegetable oil on all sides of the meat.
Place meat on air fryer tray and set to cook at 400° F for 8 minutes. Make sure that an extra tray is at the bottom to catch excess oil from the cooking. Note: it will pop while cooking, this is normal and expected.
After the first 8 minutes, let rest for about 5 minutes before pulling out and flipping each piece to even out the cooking. Then cook for another 7 minutes.
Let rest, then chop up the meat.
Heat a skillet over medium heat with the tablespoon of vegetable oil. Sauté garlic and bell pepper until cooked.
Add in the chopped pork, mix in 1 tablespoon fish sauce, 2 tablespoon soy sauce, 2 tablespoon mayonnaise, and juice of one lemon. Cook until the meat is properly coated with the sauce.
Serve over white rice. Enjoy!
